SITUACIÓN DE LAS FINCAS:

Municipalities of Beniarrés, Gaianes, Gorga and Muro.

VARIETIES:

50% Malvasía / 25% Merseguera / 15% Verdil.

VINIFICATION:

The grape harvest was hand-made, with die-cut boxes of 12 kg, after a special processing of the vines.

At the beginning of September the Malvasía and the Verdil were harvested; and in the middle of the month the Merseguera. The grape, inside the boxes, stayed in a cold-storage room for 5 days at 5 degrees. We removed the stalks from the grapes and press them quickly.

Every variety was fermented separately into little inox tanks. The Malvasía was fermented in an oak French cask of 2.000 l. This process lasted about 20 days at 17ºC

AGING:

After the fermentation, 50% of the wines were still on fine lees into their own inox tanks, 50% will be raised in French oak barrels of 300 and 2.000 litres on fine lees during 6 months. Finally, two months before bottling it, the coupage was made.

AGING:

3 months.

BOTTLING:

June 2015.

PRODUCTION:

3.400 Bottles.
