VINEYARDS SITUATION:

Municipalities of Beniarrés, Alcocer de Planes, Alcoi & Tibi.

VARIETIES:

50% Monastrell / 25% Giró (Garnatxa del país) /50% Garnatxa Tintorera and 5% Bonicaire

VINIFICATION:

The grape harvest was hand-made, with die-cut boxes of 12 kg, after a special processing of the vines. First of all, in September, the Garnatxa Tintorera was harvested; secondly theGiró and the Bonicaire. The Monastrell took a long time, until October. The grape, inside the boxes, stayed in a coldstorage room for 5 days at 5’5 degrees. We removed the stalks from the grapes and the juice was poured into inox casks of 2,000 litres. They were placed on the top where a previous cold maceration was made. The fermentation-maceration lasted about 15 days at 28-30ºC. All varieties were fermented separately. TheGarnatxa Tintorera was fermented in an oak French cask of 40 hl.

AGING:

The Garnatxa Tintorera grew up on fine lees in an oak Frech cask of 40 hl for 6 months. As well, the Monastrell grew up on fine lees in an inox cask. The Bonicaire and the Giróhowever grew up in worn oak French casks (second and third year) of 500 litres for 6 months.
